This day is for Christians the last day before Lent, which begins a period of fasting and austerity, in remembrance of the 40 days spent by Jesus in the desert.
Mardi Gras is marked by festivities, in families and schools. We dress up, we organize parades in our neighborhood or our city, we eat donuts. This day is called "Gras" in reference to the rich foods that are eaten there.
This festival takes on important dimensions in certain cities such as Nice and Dunkirk in France, Binche in Belgium or Cologne in Germany.
It is also before the start of Lent that we celebrate carnival, which coincides with the "fat days" during which excesses are allowed. Some carnivals are world famous, such as the one in Venice and the one in Rio de Janeiro, and they all end on Mardi Gras day.
